It was great to finally be able to put a mental image with the name of Pharsalia! Thank you for letting me tag along on Sunday to represent Hill City Bride and The Clutch Guide ... the food was wonderful (especially the apple dip ... delish!!), and I am still in awe over the ice house. How different things are now than they were back then. :) Everything looked beautiful, and I hope that you all have a Merry Christmas and a successful 2012! :)

Dear Foxie,
 
The phrase "thank you" does not say enough to let you know how much we all appreciated you and Maria sharing your family plantation and lovely horticulture and history with us. 
 
You both did a spectacular job of providing us with the history and current day events and life at Pharsalia.  I could have sprawled on the lawn and stayed forever.  Your views are beyond imagination and your flora and trees are wonderful and inviting.  When I got out of my vehicle and saw all of the rich colors from your flowers, shrubs, trees, grasses, and your mountain and hillside surroundings, it was absolutely breathtaking! 
 
The snack table was lovely and oh so good!  The arrangements that you had made from your flowers and herbs were wonderful and thank you for sharing each and every one with us.  
 
You went far beyond my expectations.  Everyone had a great time and we all thank you so much for that.  
 
I wish you happiness, love, joy and peace in all things.  I hope to see you again, soon.

Dear Foxie, family, and friends,

I wanted you all to know that my visit to Pharsalia was the highlight of my trip to Virginia to celebrate Wylie and Matthew's wedding. Bonnie choose the perfect place for Wylie's Bride's maids' luncheon.  I was truly in my element in your lovely home.  As an avid gardener, personal chef, and true connoisseur of all things Southern, I felt as if I had died and gone to heaven.  Everything was perfect from the bacon wrapped apricots to the candy sweet cherry tomatoes picked in the garden. No detail was overlooked.  The fig leaves that lined the platters and the garden fresh dahlias as garnishes were simply elegant. No presentation details were missed, and I thoroughly enjoyed every morsel. It was a pleasure to visit with your daughters and your daughter's mother-in-law in the kitchen too.  Hospitality truly is a hallmark of Pharsalia.  

If you are ever looking for an extra hand to work during your busy season, I would volunteer to work just for the experience of spending time in your magnificent surroundings. I would come all the way from Texas to fill my spirit with the splendid views and pastoral atmosphere.  I look forward to receiving your newsletters so that I can be reminded of my short visit there.  In exchange, I promise to send you some seeds for the variety of grape tomatoes that we discussed as we toured the garden. Thanks to all of you for the hospitality and for sharing your lovely plantation with us.

Foxie, Sarah and I wanted to take time to thank you and your family for making our wedding a day for us and our guests to remember forever. We spent hours and hours, weeks and months, planning the details of our dream wedding. With your help, Sarah and I knew the only thing left for us to do was just show up on Saturday.    

When the rain began to fall in record amounts and the dynamics of our wedding changed before our eyes, we didn’t know what to do. What happened next was something Sarah and I will never forget. Foxie, you and your family got busy making everyone comfortable and most of all, moved the ceremony inside Pharsalia. I can’t describe the warmth and coziness we felt exchanging vows inside Pharsalia. The intimacy of our family and friends nestled together sharing that moment was beyond us all. Sarah and I cannot thank you enough for changing the rain from an inconvenience to an unforgettable part of our wedding.

So,  dear Foxie, thanks again for yesterday, what a beautiful day!! So much preparation and hard work, and more, the flow of the workshop was fantastic.  Thanks for the wonderful enclosures, and for the great notes, the folder was super. xxoo  I pored over it all last night when I got home, and marveled at how much you had packed in to it all.  Even sorted which herbs I will take to Wintergreen mountain, and which I will savor here at home.

What a special treat !! Your place never looked more beautiful. The speaker was so good..I hated for it to end, and lunch was Divine.
 
I can't wait to plant my herbs..keep your  fingers crossed that I don't kill them. Today was worth EVERY penny!!!

It was a terrific day of herb information and herbs to buy and wonderful food. Kudos to Maria for another fantastic meal... it was delicious.. So glad you had such good weather for the event. Pharsalia looks so beautiful and all your hard work is really making it an unbelievable showcase.
